Non-deep fried fritters

I'm on a bit of a food post streak and this one has to get a mention. When I have an abundance of something (in this case, apples) I like to find as many different uses for it as possible. Naturally, I made apple pie, apple crisp, apple sauce and a baked apple or two. I googled more options and found a recipe for non-deep fried apple fritters. I'm not sure if you can still call them fritters if they're not deep fried but regardless, they taste awesome. I made them with whole wheat flour, lots of apple chunks and then drizzled them with lemon icing.
A small bowl of leftover lemon drizzle was wisely used for dunking. Mmm.
