Now that I live in an apartment with a nice big functional kitchen, I'm spending a lot more time baking and cooking. One thing I discovered this week, is the difference between baking with buttermilk and simple milk with a drop vinegar. All these years, I've used the latter since I didn't actually know what buttermilk was or where to get it . But since I spotted it at the grocery store I thought I'd give it a go. What a magical difference!

So using my very first carton of buttermilk  I made strawberry rhubarb muffins with brown sugar and cinnamon topping, then banana muffins with brown sugar, cinnamon and almond topping, and finally buttermilk pancakes with chocolate chips. All these items turned out beautiful, fluffly, moist and delectable.
My second favourite thing at the moment, is the said topping of brown sugar and cinnamon. It makes every muffin taste a little more like coffee cake - dee-licious! These are the banana muffins in the photo, I crushed some almonds in with the brown sugar and cinnamon for a little extra ooh-la-la.
