Glorious Avocado

I want to talk about avocados, the wonderful green fruit that goes with almost every meal. I've always enjoyed guacamole and slices of avocado with various dishes but it wasn't until I went to Guatemala, where I ate it daily, that I truly developed deep feelings for it. I'm also pleased with the fact that avocados provide healthy fat, which is something that a scrawny person like me can happily take advantage of.
Avocados are now a staple in my kitchen, just like onions and oil. I'll often mash up an avocado with some sea salt and cilantro to snack on with nachos or tortillas. Sometimes I add a squeeze of lime, and if guests are over then I add some garlic, onions and tomato.

As an easy dinner (though a bit time consuming if I have to make my own tortillas) I make fresh fajitas with seasoned rice, homemade salsa, sour cream and slices of avocado. The salsa is made simply with tomato, onion, garlic, cilantro, salt, pepper and olive oil. I season the rice by cooking it with ready-mixed fajita seasoning, if i have it on hand, but I prefer to use my own spices - mostly cumin and chili powder.
The third item makes an awesome lunch that I could eat everyday. It's a green grilled cheese: spread pesto on two slices of bread and pile on cheddar or mozzerella, goat cheese, avocado and spinach then place in a sandwich press. The press works much better than grilling in the pan because of all the slippery items that can easily fall out of the sandwich.
